Good morning, sunshine! I love good breakfast. Especially when I travel, I enjoy going to one of the local breakfast places, such as Early Girl Eatery in Ashville, NC. However, traveling doesn’t happen often, so I have to create my own paradise every once in a while.
Breakfast is considered the most important meal of the day, and I myself take it very seriously. Since I don’t have much time to make fancy breakfast on daily basis, I definitely make up for it on weekends. For the past 5 years, I’ve been making this gourmet pancake breakfast every Sunday. My family loves it, and it never gets old.
- pancake mix
- olive oil
- sliced fruit
- 100% maple syrup
Prepare bacon. Make pancakes based on the pancake mix box instructions (my favorite is Aunt Jamima’s Pancake Mix). Spread butter on each pancake, add strawberries and bananas or other fruit of your choice, sprinkle some toasted pecans (I keep a jar of toasted pecans at all time, so that they are ready to use when needed), and drizzle maple syrup on top. That’s it. Looks nice and tastes amazing!
