Here is a great kid-friendly recipe. I have a son, and it’s always a struggle coming up with foods to satisfy his taste. I try to think of soft foods I can feed him, so that they are easy to bite and to chew. These pot pies are perfect for my little one. They look so cute, and your child won’t be able to resist them. As a bonus, this meal is great for adults, so make enough for the whole family!
This dish can also be served on a regular plate on top of couscous, however, I like to use these small ramekins. In addition, you are welcome to use anything you find in your kitchen. How about a coffee mug. 😉 Also, feel free to use any vegetables you like instead of the ones used in this recipe.
- 2 cooked chicken breasts
- 10 baby carrots
- 2 medium bunches of broccoli
- 2 cups Alfredo Sauce
- 1/2 teaspoon sage
- 1/2 teaspoon poultry seasoning
- 1 tube of biscuit dough
Serving size: 4 people
Boil carrots until they are almost soft (poke with a knife to check), add in broccoli. When all are done, remove from heat. Cut chicken breast and vegetables into small cubes. Combine chicken, carrots, broccoli, sage, poultry seasoning and Alfredo sauce and let everything cook and bubble for 8 minutes in a medium pot and on medium heat. Fill up the ramekins. Take a thin layer of biscuit dough and make a lid for each ramekin by pressing on the sides. With a knife, cut 3 holes on top of the dough. Put the ramekins on a cooking sheet and add the remaining biscuits to the sheet as well (for extra yumminess). Bake in the oven (350 degrees) for 15 minutes or until the top is cooked and crispy. Be careful, it’s hot!
